Directions / Best and Easy Bread Recipe

In a large bowl, add 1 ½ cup of warm water, add 1 tablespoon yeast, and 1 tablespoon sugar. Dissolve and add 1 ½ cup of the flour. Wait for 20 minutes or until you see bubbles on the surface. Add 2 ½ cups of flour, ½ tablespoon salt, oregano (not mandatory), and olive oil. Start kneading or mixing with a stand mixer. Add the remaining flour and continue mixing until the dough is smooth. Once the dough has a soft consistency, stop kneading. Grease the top with olive oil and cover. Place in a warm place for 1 to 2 hours (depends on the yeast) and leave it to double in size. Once ready, divide it in half and knead the halved dough for 1 minute. Grease 2 loaf pans 22 x 12 cm or put a parchment paper. Put the dough in the pans and let it double in size again for 1 hour – If you want to make hamburger buns, you may divide the dough into balls 110 g. Grease again the top with olive oil. For more authentic results, you can sprinkle flour on top. Bake at 180°C (360°F) for 40 minutes or until golden brown. Remove it from the pan and let it cool. If you leave in the pan it will continue cooking.

Tips & Health Recommendations

  • Never dissolve the yeast with hot water. The hot water will deactivate the yeast.
  • Never add the salt to the yeast. It will deactivate it. Add the salt on top of the flour when the yeast is activated.

You can get food poisoning from any product when surfaces are contaminated with pathogenic bacteria, from mixing meat products with vegetables or using contaminates utensils (cross-contamination). Food can be also contaminated if the one who is handling food does not wash their hands properly. Carriers of Hepatitis A, staphylococcus aureus, or other pathogens also can contaminate food.

wheat (flour)may be contaminated with Aflatoxins- Aflatoxins do pose a serious health risk to humans, such as cancer. Two closely related species of fungi are mainly responsible for producing the aflatoxins of public health significance: Aspergillus flavus and Aspergillus parasiticus. Bulgur also can be contaminated with  Bacillus cereus spore-forming bacterium.

During growth, harvest, and processing, one of the final products, represented by virgin olive oil, can be contaminated with coliform. Coliform bacteria  can be non-pathogenic and opportunistic pathogen. They are isolated from animals, vegetables, and water. Studies show that this type of pathogen can survive in olive oil when it has a low level of phenolic compounds. Olive oil consists of 3 phenolic compounds and their level have to be high to prevent coliform bacteria to form and survive.
