Working and molding the dough gives you a relaxing feeling, not to mention that the homemade bread is more beneficial to your health than the manufactured one (no preservatives added). With the dough, you can create a variety of forms and dishes. Moreover, you will be amazed by the results of your creations. Today, I will show you how easy is to prepare and bake a homemade loaf. 5 cups flour 2 cups of water 1 tablespoon yeast 1 tablespoon sugar ½ cup olive oil 1 tablespoon oregano 1 tablespoon salt
In a large bowl, add 1 ½ cup of warm water, add 1 tablespoon yeast, and 1 tablespoon sugar. Dissolve and add 1 ½ cup of the flour. Wait for 20 minutes or until you see bubbles on the surface. Add 2 ½ cups of flour, ½ tablespoon salt, oregano (not mandatory), and olive oil. Start kneading or mixing with a stand mixer. Add the remaining flour and continue mixing until the dough is smooth. Once the dough has a soft consistency, stop kneading. Grease the top with olive oil and cover. Place in a warm place for 1 to 2 hours (depends on the yeast) and leave it to double in size. Once ready, divide it in half and knead the halved dough for 1 minute. Grease 2 loaf pans 22 x 12 cm or put a parchment paper. Put the dough in the pans and let it double in size again for 1 hour – If you want to make hamburger buns, you may divide the dough into balls 110 g. Grease again the top with olive oil. For more authentic results, you can sprinkle flour on top. Bake at 180°C (360°F) for 40 minutes or until golden brown. Remove it from the pan and let it cool. If you leave in the pan it will continue cooking.

During growth, harvest, and processing, one of the final products, represented by virgin olive oil, can be contaminated with coliform. Coliform bacteria can be non-pathogenic and opportunistic pathogen. They are isolated from animals, vegetables, and water. Studies show that this type of pathogen can survive in olive oil when it has a low level of phenolic compounds. Olive oil consists of 3 phenolic compounds and their level have to be high to prevent coliform bacteria to form and survive.
